Salesforce is the older and more deeply configurable platform. It can be shaped to almost any process logic, but that costs effort in setup, administration and operation — usually in-house specialists or standing external support.
HubSpot leans increasingly on a well-considered standard: productive sooner, easier for departments to work in, with marketing, sales and service on one data set. The limit shows when processes get highly specific — then you extend rather than configure.
We are a Diamond HubSpot Partner and therefore not neutral, so let us be plain: where Salesforce is the better fit, we do not recommend switching. A move is only worth it if your current system ties up more administration than it returns.
